Any app or site you use that you use your information takes away from the privacy of Bitcoin as those records tie you to the transaction.
I myself use self custody wallets. I never 'buy' Bitcoin so no record directly attached to my info
Also have to be careful of taxes as Bitcoin transfers are in fact taxable events in many cases
