BROILED CAJUN CATFISH

Ingredients:

1 1/2lbs of Cat Fish filets
1/4/ Cup of Buttermilk
1/2 Cup of Yellow Corn Meal
1/2 Tsp of Salt Substitute
1/2 Tsp of Paprika
1/2 Tsp of Onion Powder
1/4 Tsp of Garlic Powder
1/4 Tsp of Cayenne Pepper


Directions:

Preheat broiler

Lightly spray a rack with cooking spray and place on a baking sheet.

Place filets in a shallow dish and pour buttermilk over them and turn to coat well.

Mix all other ingredients together in bowl

Lift each filet out of the buttermilk,shaking off excess and dip both sides in the cornmeal mixture,coating completely.

Place on the prepared rack about 4 inches from the heat and broil about 3 minutes per side,or until its opaque in the center.
