Here is one I like - Chicken Stir fry
1/4 onion - sliced and diced
12 oz grilled chicken breast
1/2 jalapeno pepper - sliced and diced
1 cup jasmine or basmati rice
2 tblsp olive oil
Place 1 tbls spoon of olive oil in a cast iron skillet - on high heat
add onions and jalapenos and saute
add 1 tblsp of olive oil
add grilled chicken and lightly brown
add 1 cup of jasmine rice and mix until rice has a light brown color
Remove from heat and eat!
Its a quick and easy meal with lots of flavor and just the right amount of macros
