This recipe can be used as a “guilt free” cheat meal, as the fat content is virtually eliminated, while the taste is NOT!

  • Most grocery stores corn tortillas are made from pure corn, with no added oils. Pick up any brand that is less than 1g fat per tortilla.
  • Whole Foods or Sprouts Market carries Fat-Free cheese made by Lifetime brand. It comes in squares and is the best tasting fat-free cheese I have come across.
  • Fat free sour cream -- Walmart’s house brand “Great Value” has Fat-Free version.
  • Diced black olives (optional)
  • Organic black beans (optional)
  • Diced green chiles (optional)
  • Chicken/Lean Pork/4% lean ground beef
You can cook your protein of choice a variety of ways:

-Crock pot (great for shredding chicken and pork)

-Pan saute for ground beef


How To Construct:

You want to cut each tortilla into 4 pieces, replicating “chips.” Once you make the quantity of chips you desire, place them on a baking sheet. You can add a light spray of water (from spritzer bottle) over the chips before seasoning to help spices adhere. You can simply use sea salt and pepper, or add cayenne powder, or whatever other spices you desire.

First bake the chips by themselves for approx 10-14 mins at 350 degrees. Check on the chips and see if they slightly brown, before taking them out. Once out of the oven, add ingredients onto the stack of chips. I like to layer cheese over a few times and go back and forth between layers of cheese and more ingredients. Since the meat is already cooked, you will put the nachos back into the oven just to melt the cheese for approx 3-4 minutes.

*Add fat-free sour cream on AFTER the oven process
