TILAPIA & SHRIMP w/ LEMON / PEPPER SAUCE

Total Time: 40 minutes

Ingredients:

1lb of fresh Tilapia
1lb Of Medium Shrimp,peeled & deveined
1 Tbso of Xtra Virgin Olive Oil
1/2 Tsp of Minced Garlic
Half Tsp of Sodium-Free Lemon Pepper Seasoning
1/4 Cup of Balsamic Vinegar
1 (14.5oz) Can of Diced Tomatoes,drained
Cooked Brown Rice


Directions:

Preheat oven to 325F. Coat a 3-quart rectangular baking dish with nonstick cooking spray.

Place tilapia in dish and lightly brush with oil.

Sprinkle with garlic powder and lemon pepper.

Drizzle with vinaigrette.

In a medium bowl combine , shrimp and tomatoes. Spoon over tilapia.

Bake, uncovered, 25 to 30 minutes or until shrimp are opaque and tilapia flakes easily with a fork.

Serve over brown rice.
